This easy recipe makes for a satisfying, crunchy salad topper or appetizer.

1 can drained, rinsed Chickpeas or garbanzo beans canned

1 tablespoon Olive oil

1/2 tsp Cumin seed ground or whole
...
1/2 tsp Chili powder
...
1/2 tsp Garlic powder

1/4 tsp Pepper red or cayenne spice

1/4 tsp Salt

  • Preheat oven to 400F.
  • Drain and rinse chickpeas, put in medium-sized bowl.
  • Mix in olive oil and spices to coat the chickpeas.
  • Line a cookie sheet with parchment paper. Transfer the coated chickpeas to cookie sheet and bake for 15 minutes. Stir chickpeas. Bake another 15 minutes, stir chickpeas. Finally, bake 10 more minutes or until peas are crispy. May be served hot or cold.

Makes about 2 cups
1 serving = 1/2 cup

Makes a great snack as well as a delicious addition to salads.
