15 oz Chickpeas or garbanzo beans canned no salt added
15 fl oz Corn sweet yellow canned
1 lime yields Lime juice raw
2 tablespoon Olive or extra virgin olive oil
1 tsp Cumin seed ground or whole
1 cup, chopped or sliced Tomatoes red raw
1/2 cup Cilantro or coriander leaves fresh or raw herb
- Rinse the beans and drain the corn.
- Mix dressing of lime, olive oil, and spices in a large bowl.
- Add the rest of the ingredients, except avocado, and mix well.
- Dice and add avocado just before serving.
- Serve or refrigerate.
If you want to use this recipe as a side dish, then portion out 12 instead of 6 servings.
