  • Thinly slice 2 small tomatoes (if you can locate heirloom tomatoes, even better).
  • Thinly slice fresh basil by rolling up each leaf and then slice into thin ribbons.
  • Place bread in toaster oven. While bread is toasting, cut avocado in half. Save 1/2 of the avocado for later.
  • Once bread is toasted, evenly divide the avocado half between both pieces of toast using the back of a fork to smash the avocado.
  • Layer the sliced tomatoes on top of the avocado, sprinkle with fresh basil and drizzle lightly with balsamic vinegar.
  • Add a pinch of coarse salt and fresh ground pepper on top.
  • Serve immediately.
