  • Coat a slow cooker with pan spray.
  • In a pan, saute the chopped onions and green peppers in olive oil until tender.
  • Place the onions, green peppers, and diced tomatoes in bottom of slow cooker. Top with pork.
  • Sprinkle with paprika.
  • Cover and cook on high for 4 hours, or low for 8 hours, or until pork shreds easily.
  • Shred the pork.
  • Chop the cilantro then add it to the slow cooker along with ketchup, cumin, and salt. Stir to mix.
  • Warm the tortillas (you can microwave them on a plate covered with a wet paper towel - go for 30 seconds at a time until they are warm enough).
  • Spoon 1/2 cup pork mixture on each tortilla and top with shredded lettuce and yogurt.

Tips:
This recipe uses a whole wheat flour tortilla that is 7-8 inches in diameter. You can lower calories and carbs by using a low carb flour tortilla.

Garnish with extra fresh cilantro leaves.
