  • Make 8 hard boiled eggs the day before you prepare this recipe and store in refrigerator.
  • In a medium bowl, whisk together mayonnaise, drained capers, mustard, lemon juice, and lemon zest.
  • Add peeled and chopped hard boiled eggs to mayonnaise mixture and coarsely mash with a potato masher.
  • Season with a pinch of salt (1/16 tsp) and black pepper to taste.

Tip:
Enjoy with lettuce, whole grain crackers, or with whole grain bread. Just be sure to log those additional food items if you consume them as they are not included in the recipe analysis.
