  • Preheat oven to 350F. Spray a 9 x 13 inch baking pan with oil.
  • Sift flour, salt, sugar, cocoa and baking soda into a medium-sized mixing bowl.
  • Grate zucchini - 3 medium sized zucchini should make the 2 cups grated needed for this recipe.
  • In a separate bowl, combine eggs, vanilla extract, pecans, grated zucchini and canola oil.
  • Mix together dry and wet ingredients.
  • Spread dough in oiled pan.
  • Bake for 30 minutes or until brownies are done cooking. Brownies are done once a toothpick inserted into the center of the brownie pan comes out clean.
