Filled with hummus, turkey, and carrots, these cucumber boats are a quick, low-calorie option for a light lunch, appetizer, or snack.

1 medium Cucumber peeled raw
3 oz Turkey white rotisserie deli cut
1 cup, grated Carrots raw

- Cut peeled cucumber in half lengthwise and scoop out the seeds by running a tsp or small spoon over the seeds. Leave some flesh in the cucumber.
- Cut each cucumber half into 3 even sections.
- Spread 1 Tbsp of hummus into each boat.
- Roll deli meat and press into each boat. Use 1/2 oz of deli meat in each boat.
- Sprinkle grated carrots evenly over each boat.
- Serve chilled.
