1 head, medium (5-6" dia) Cauliflower raw
2 tablespoon Olive or extra virgin olive oil

  • Wash a medium head of cauliflower.
  • Cut the cauliflower into large chunks, discarding the core.
  • Place raw cauliflower chunks in a food processor and pulse until the cauliflower is in small pieces and looks like snow.
  • Either use this raw cauliflower in a recipe (see Easy Keto Beef & Cauliflower)
  • OR
  • Prepare by heating 2 T olive oil on the stove. Add the cauliflower to the skillet and cook for about 10 minutes just until the cauliflower is fork-tender.
  • Season and enjoy in place of traditional rice.
