7 steps

  • Preheat oven to 350F. Coat an 8 x 8 inch baking pan with cooking spray.
  • In a large bowl, mash bananas with a fork.
  • Stir in vanilla extract and oil.
  • Chop the dates.
  • Add dates, rolled oats, sunflower seeds, chia seeds, and cinnamon to bowl and stir to mix.
  • Press mixture into the baking pan. Bake for 25 minutes or until edges are crispy but not burnt.
  • Remove from oven. Cut into 16 equal squares while still warm in pan. Leave bars in pan to cool.

Tips:
This is a great recipe for using overripe bananas.

It is easier to cut the bars while they are still hot.

To prevent scratching a metal baking pan, cut with a plastic serrated knife.
