3 steps

  • Add cocoa powder to a large 12-ounce mug. Add 1 tbsp of milk and then stir to make a wet paste.
  • Microwave mug for 10 seconds and then whisk in the rest of the milk along with the coffee. Microwave for 60-90 seconds, stopping every 30 seconds to whisk and check the temperature to make sure it doesn't get too hot.
  • Add liquid stevia and peppermint extract to the mug and whisk to mix.

Tips:

Making the cocoa paste helps dissolve the cocoa powder once the remainder of the milk is added.

This recipe works with leftover or freshly made coffee. Or, if you prefer, use 1 shot of espresso instead of 1/2 cup of coffee.

This recipe uses the equivalent sweetness of 2 tsp of sugar. If you use a liquid stevia product that does not offer drops, use the standard serving size listed on its container and adjust to your preferred level of sweetness. For most products, 1/16 tsp liquid stevia will be equivalent in sweetness to 1 tbsp of sugar.

You can substitute stevia with 1 tbsp of sugar-free maple syrup if you prefer - the taste works well with the peppermint extract.

If you plan to use a milk frother instead of a whisk, then use a larger mug so that the milk does not jump out of the mug.

Add a whipped topping for an extra treat - just remember to log it!
