  • Preheat oven to 350F. Coat a 9 x 5-inch loaf pan with cooking spray and line with parchment paper.
  • In a large bowl, whisk together whole wheat flour, ground ginger, cinnamon, nutmeg, baking powder, baking soda, and salt.
  • In a medium bowl, whisk eggs. Whisk in applesauce, molasses, maple syrup, canola oil, and vanilla extract.
  • Add egg mixture to flour mixture and stir until just combined.
  • Pour batter into loaf pan and bake for about 35-45 minutes. Test center with a toothpick; it should come out clean.
  • Cool pan on a wire rack for about 10-15 minutes. Remove loaf from pan and allow to cool completely.
  • Cut loaf into 12 slices and serve. Enjoy!

Tips:

Substitute maple syrup with honey if you prefer.

This tastes great with nonfat whipped topping.
