  • Make 8 hard-boiled eggs the day before you prepare this recipe and store in refrigerator.
  • In a medium bowl, whisk together mayonnaise, drained capers, mustard, lemon juice, and lemon zest.
  • Add peeled and chopped hard-boiled eggs to mayonnaise mixture and coarsely mash with a potato masher.
  • Season with a pinch of salt (1/16 tsp) and black pepper to taste.

Tip:
Enjoy wrapped in lettuce, on sliced celery stalks, or with low-carb crackers.
