8 large Egg whole hard boiled
1/2 cup Mayonnaise regular
2 teaspoon Lemon juice raw
1 tsp Lemon peel or zest raw
4 tbsp, drained Capers canned
- Make 8 hard-boiled eggs the day before you prepare this recipe and store in refrigerator.
- In a medium bowl, whisk together mayonnaise, drained capers, mustard, lemon juice, and lemon zest.
- Add peeled and chopped hard-boiled eggs to mayonnaise mixture and coarsely mash with a potato masher.
- Season with a pinch of salt (1/16 tsp) and black pepper to taste.
Enjoy wrapped in lettuce, on sliced celery stalks, or with low-carb crackers.
