  • In a medium non-stick skillet, cook the ground turkey over medium heat, breaking it up into small bits until cooked through, about 5-6 minutes.
  • Chop the onion and mince one garlic clove. Add onions and garlic to the turkey, and cook another 2 minutes.
  • Transfer to the slow cooker. Dice the bell peppers and add the bell peppers, tomatoes, rosemary, salt, and black pepper to the slow cooker.
  • Cover and cook on low for 4 hours.
  • After the meat is cooked, prepare the sandwich thins. Place each thin half on a sheet pan, spray with olive oil, and sprinkle with Italian seasoning and Parmesan cheese on each side. Broil about 6 inches (15 cm) from the heating element until the top of the bread is golden brown, 3 to 5 minutes, watching it carefully.
  • When toasted, remove from the oven and rub the remaining garlic clove over the bread.
  • Top each slice with 1/2 cup of meat mixture and add 2 tablespoons of shredded mozzarella cheese. Place back into the oven for about 1 to 2 minutes or until cheese is melted.
