2 cucumber (8-1/4") Cucumber with peel raw

2 tbsp Sesame seed kernels (shelled) dried

1/4 cup Vinegar rice

3 steps

  • Peel cucumbers leaving alternating green stripes. Slice the cucumbers in half lengthwise; scrape the seeds out with a spoon. Cut into very thin slices. Set aside.
  • Toast the sesame seeds in a dry skillet until lightly browned, stirring constantly.
  • Combine vinegar, sugar and salt in a medium bowl, stirring to dissolve. Add the cucumbers and sesame seeds; toss well to combine.
