  • Combine the dates, rolled oats, pecans, and chia seeds in a food processor. Process about 2 minutes until ingredients are finely chopped.
  • Add the carrots, vanilla extract, cinnamon, nutmeg, and salt. Cover and process another 2 minutes, or until ingredients begin to form a dough
  • Scoop tablespoon-size portions and roll into a ball. Recipe should make 16 balls.
  • Store in refrigerator for up to a week.
