1/4 cup Oats steel cut dry uncooked

1/16 tsp Salt

3/4 cup Water

4 sprays, about 1/3 second each spray Vegetable cooking spray oil

1 cup, pieces or slices Mushrooms white raw

1 large egg Egg whole raw

1 tsp Olive or extra virgin olive oil

2 tbsp Parmesan cheese grated

1 cup Baby spinach

5 steps

  • Mix oats, salt, and water in a bowl. Cook in microwave, according to package directions, about 7 to 10 minutes.
  • Coat a medium skillet with cooking spray. Over medium-high heat, add mushrooms and saute until mushrooms are soft, about 4 minutes.
  • Move mushrooms to the side of the skillet. Crack egg onto the center of skillet and cook until set.
  • Mix in olive oil, pepper, and Parmesan cheese with the cooked oats. Transfer to a serving bowl.
  • Top the oats with mushrooms, egg, and spinach. The spinach will slightly wilt with the heat of the oats.

Tips:
Top with red pepper flakes.

Cook oats on the stovetop if you prefer.

Include a small portion of cooked sausage or crumbled tempeh for extra flavor and texture.
