  • Heat olive oil over medium heat in a very large nonstick skillet. Add the onion and saute for 10 minutes or until the onions have browned.
  • While the onions are cooking, whisk the egg whites (about 1 cup + 2 tablespoons of pasteurized egg whites), whole eggs, and black pepper in a bowl and set aside.
  • Add the sausage to the skillet and cook for 3-5 minutes or until cooked. Add the garlic and saute for another minute.
  • Add the egg mixture to the skillet and stir for about 3-5 minutes or until the eggs are no longer runny. Add the spinach and stir until it wilts.
  • Remove the skillet from the heat and sprinkle with grated cheese. Enjoy!

This recipe makes 4 cups.
1 serving is 1 cup.

Tips:
You can use ground or link sausage in this recipe, but slice or dice links before adding them to the skillet. You can use whatever type of sausage you prefer, but Italian sausage has a lot of flavor and tastes good with eggs.

To save time, consider using frozen chopped onion, garlic paste, and egg whites from a carton (pasteurized egg whites).
