  • Chop carrots and place them in a microwave-safe bowl. Add 1 tsp water and cook on high for about 3 minutes or until beginning to soften. Set aside.
  • Peel and grate fresh ginger using a microplane. Set aside.
  • Place all ingredients into a high-speed blender. Add cold water to thin the consistency, if needed.
