Crack and beat the eggs in a small bowl. Add in cottage cheese and mix. Though the mixture looks lumpy, the cottage cheese will melt when cooking the omelette so the lumpy texture will improve. If you're worried about it though, you can put the mixture in the blender at this stage to smoothen it out.
Once mixed, add in any chopped veggies (I used spinach). Season with salt and pepper. I also added garlic powder and onion powder, but feel free to replace them with chopped garlic and onion or omit altogether.
Heat a non-stick skillet with olive oil over medium heat. When hot, add in mixture and cook through.
