These frozen yogurt-covered strawberries coated with chopped pistachios offer a lovely antioxidant-rich snack.

2 cup, whole Strawberries raw
...
2 tablespoon Pistachios dry roasted without salt
...
2 oz Yogurt vanilla nonfat

  • Line a baking sheet with wax paper.
  • Wash and pat dry strawberries, leaving the green tops on.
  • Chop pistachios very fine.
  • Holding the strawberry by the green top, dip in yogurt and place on baking sheet. Repeat until all strawberries are used.
  • Sprinkle chopped pistachios over yogurt portion of strawberries then place baking sheet in freezer for 1 hour. Serve and enjoy.

Tips:
2 oz of yogurt is 1/4 cup.

You can remove the green tops and use little wooden skewers for dipping the strawberries if you prefer.

It's easier if the baking sheet has edges (e.g. jelly roll pan) so that the fruit does not slip off the edges.

You can experiment with different types of yogurt as the dipping sauce.
