What are your favorite healthy go to low carb breakfasts


Hi LucyLake28, my all time fave low-carb breakfast is veggie omelet with grated aged cheese and extra virgin olive oil. I use 1 XL whole egg and 1 XL egg white with a little bit of milk. Veggies are whatever I have in the frig, but often, I'll saute scallions, mushrooms, and sweet peppers. I also add 1-2 tbsp of an aged cheese - usually Romano.


That sounds yummy! And my kind of breakfast too. To fill me up, I usually add a huge handful of greens like Organic baby greens mixed with radicchio and Strawberries sliced (just a couple) and Cherry Tomatoes or Cucumber slices, and a bit of Skinny Girl Balsamic Vinaigrette mixed with fresh squeezed lemon juice.

I’m weighing out most of my food and have noticed even a slice of bread can be off on calories. Example a slice of Dave’s bread might be 70 calories but in weight it’ll be slightly lower. I even weigh the eggs I eat. What is your opinion on weighing verses going off of the label? This is something that has actually helped me personally, there were times I thought I was overeating and it seemed counterproductive for me, especially with meats because who really knows a portion right? Hi LucyLake28, I usually try to weigh my foods when I am at home since it is so easy to do (I have a digital scale that tares out the plate or bowl weight). I almost always weigh my bread since some slices are larger or smaller than what is on the label for artisan breads with irregular shapes. Weighing is the most accurate way to log if you have the time and equipment - so go for it!

I love your add-ins - you can't go wrong with greens and veggies. And sliced strawberries are perfect for a little sweet since the calories and carbs are very reasonable for the portion size.

Breakfast burritos. There are many recipes on the internet for scrambled egg burritos that can be frozen. Make up a bunch on the weekend. Warm them in the microwave if you must, but a toaster oven doesn't leave the tortilla soggy. Add bell peppers, onions, mushrooms.


Recently we've been experimenting with frittata recipes. We wanted to make a big batch to have for Thanksgiving morning here's what we did: We mixed 12 large eggs + 8 egg whites, spinach, cherry tomatoes, red pepper, green onions, parmesan cheese, milk, turkey sausage. Then baked it at 350 degrees until done. This is also a great recipe to freeze and reheat in individual servings. Happy Thanksgiving! Joanna (Dietician)
