I Love Seitan and I love to make Seitan. It is definitely my #1 choice for an alternative meat so I would like to share my recipe.

Dough Ingredients
4 cups Vital Wheat Gluten
1/4 cup Whole Wheat Flour
1 tbs Garlic powder
1 tbs Onion Powder
1 tbs Cumin
1 tbs Italian seasoning (your choice)
1 tsp Salt
1/4 cup Tamari (Soy Sauce)
1 1/2 cups Warm Water

Broth Ingredients
Enough Water/Vegetable Broth to fill a large pot and cover dough*
1 tbs Minced Garlic
2-4 Bay Leaves

*I use Better Than Bouillon with water to make my Broth

Instructions
Bring Broth Ingredients to a boil
Mix all of the Dough ingredients in a large bowl.
Kneed the dough for 15 minutes (I use my bread machine dough setting)
Cut dough into 4 pieces and kneed into a meatloaf shape
Place dough pieces in broth, reduce heat to medium/low and soak for 1 1/2 hours.
Store pieces covered in broth and water in air-tight containers for up to 2 weeks in the fridge.

Yum, I haven't made Seitan in ages, I should give your recipe a go.

Oh man, I love to cook. I have been know to read a cookbook like a novel. Speaking of cookbooks my two new favorites for everyday stuff are Appetite for Reduction by Isa Chandra Moskowitz and Everyday Happy Herbivore by Lindsay Nixon.

One of my favorite recipes this time of year is James Beard's Swiss Chard, Lentil and Lemon soup. Simple and great for cheap greens this time of year.

1 1/2 cup Lentils (I usually use brown but have used red and french with good results)
1 Onion
3 Cloves Garlic
2 bunches Swiss Chard (Kale and Collards are also excellent)
2/3 cup Lemon Juice

Cook lentils in large pot or dutch oven with enough water and then some
Chop onion
Crush garlic cloves in salt
Saute onion and garlic while lentils are cooking.
Add onions and garlic to cooking lentils
De-stem greens and cut or rip them into smaller pieces.
The water ratio on this for soup thickness is up to the cooks choice, just keep adding more if it seems to not be enough
When lentils have cooked add greens to pot, I set it all on top and let it stem for a while before I mix them in.
When the greens are cooked to the desired texture and the lemon juice and stir into soup and it's done.
