Easy healthy potato salad

One easy, healthy potato salad just in time for summer!

When you think of potato salad, you probably visualize a creamy, mayo-heavy salad, right? This Mediterranean-inspired potato salad defies the 1940s version by using heart-healthy ingredients that let the potatoes shine instead of being buried in mayonnaise. It also complements the potatoes with extra carrots, celery, green pepper, and cherry tomatoes to add color, flavor and lighten the calories. The calories and saturated fat are half that found in traditional potato salad. So light and fresh, it's actually safer to serve at picnics since no mayo or dairy are in the recipe. Move over, Grandma, an easy, healthy potato salad is in town!

Mediterranean-Inspired Potato Salad

Prep time: 20 minutes
Cooking time: 20 minutes

  1. Boil the red or gold fingerling potatoes until tender. Allow to cool completely. When cool, cube into 1-inch (2.5 cm) bite-size pieces.
  2. In the meantime, finish any prep of the veggies, including cutting the cherry tomatoes in half. Add the fresh-cut vegetables and parsley to the potatoes.
  3. Toss the vegetable mixture with the olive oil and cider vinegar. Add the salt and pepper, then give a good final toss. Chill salad before serving.
